This recipe is definitely a keeper as my hub and kiddo love it so much, and a sure way to make us eat fish. Also, as culinary is not one of my best skills, steaming is the easiest method of cooking. This recipe doesn’t take much effort and time, and perfect for a working mom. So, cook away, mommies!
Ingredients :
- 2 medium size white pomfret fish (any fish will do, really)
- 2 stalks of lemongrass, cleaned
- 4 cloves of garlic, finely chopped
- 1 cube of chicken stock, diluted in 2 tablespoons of water
- 2 inches of ginger root, finely chopped
- 1/2 cup of lime juice
- 1 onion, coarsely chopped
- 3 tablespoons of fish sauce
- 1 tablespoon of sugar
- 2 tablespoons of oyster sauce
- 1 tablespoon of cooking oil
- Coriander leaves, red chillies and onions for garnishing
Method:
- Clean the fish. Insert lemongrass into the fish belly. Marinate the fish with garlic, ginger root, chicken stock and lime juice for half an hour.
- Steam the fish for 20 minutes or until cooked. Remove from steamer and serve on a plate. Make sure to keep the remaining marinated liquid (including the garlic and ginger, that definitely add the taste)
- Heat up a pan and add cooking oil. Saute onion until tender. Add in oyster sauce and the marinate. Boil the liquid until slightly reduced and add fish sauce and sugar to taste.
- Pour the boiled liquid on the steamed fish. Garnish with coriander leaves, chillies and onions.
